Meal Planning Monday {September 12-18}


I thought I had another good week in the kitchen, and then I looked back and realized I only cooked a couple of days. At least the few things I made were delicious! Here’s what we ate this week:

Monday: Cafe Rio

We had an appointment that I assumed would be done at 5:30 but ended up going until 7pm, so we swung by Cafe Rio and grabbed some pork enchiladas for dinner on our way home. 

Tuesday: Zucchini Pizza Boats

These were super easy, delicious, and a great way to use up some of our garden harvest! They also reheat well, so feel free to make extras!

Wednesday: Enchilada Casserole

I am too lazy to roll my enchiladas, so I layer them like lasagna. They still taste delicious and are way easier to make! I doubled the batch and froze one casserole for later!

Thursday: Leftovers

Thursday nights I have my prenatal yoga class, so I always plan to have leftovers in the fridge for Laszlo and then I eat once I get home. 

Friday: Leftovers

We finished up the zucchini pizza boats and then treated ourselves to Friday night root beer floats (have I mentioned that the baby has totally thrown off my regular eating habits?)

Saturday: We met a friend for lunch and then snacked our way through the football game, so we skipped dinner. 

Sunday: Salmon and Clam Chowder with Garden Salad and Sourdough Bread

I used a variation of this recipe using leftover salmon that I had frozen from last week and a couple of cans of clams from Trader Joe’s. (I omitted the cheddar cheese and used normal milk and frozen corn) It was a tasty Sunday supper!

I’ve started compiling a list of labor snacks and hope to make more freezer meals next week, since baby could really be here any day now!
