MPM June 19 Healthy Meal Plans

My recent quest to cut snacking led me to several realizations. 1) My husband (and now son) require a lot more food than I would expect. 2) When I don’t plan solid lunches, I eat snack-y type lunches…which leads to needing more snacks a few hours later. With that in mind, I set out to build a much more solid meal plan for this week, including planned lunches. I think we were all a little less hangry. So, without further ado, here is what we had for dinner AND (new this week), what I ate for lunch:

 Monday

Lunch: Egg Salad on Sourdough

Dinner: Church BBQ (My contribution: oatmeal chocolate chip cookies)

Tuesday

Lunch: Leftover Salmon Chowder

Dinner: Grilled Chicken Kebabs (chicken, zucchini, onion, peppers, pineapple), corn on the cob, oatmeal cookies, and my friend brought a delicious greek salad

Wednesday

Lunch: Egg Salad on Udi’s GF Bagel

Dinner: Bacon, Chicken, Avocado & Spinach Wraps, Pea Salad, Watermelon (picnic)

Thursday

Lunch: Sausage and Egg Frittata

Dinner: Shepherd’s Pie (Another meal train dinner that I doubled)

Friday

Lunch: Sausage and Egg Frittata

Dinner: Broccoli, Spinach, & Chicken Pesto Alfredo Pasta

Saturday

Lunch: Leftover Shepherd’s Pie

Dinner: Grilled Chicken and Cheese Sandwiches, Cauliflower-Leek Soup

Sunday

Lunch: Leftover Pasta

Dinner: Grilled Turkey Burgers, 7 Superfood Salad, Watermelon

 

Anyone have any good summer recipes I could work into my meal plans in the upcoming weeks?
