Meal Planning Monday {July 24-30}

I felt like we had some pretty delicious meals last week–and even some NEW recipes! Plus we did a lot of grilling which meant my husband was on dinner duty–freeing me up to put a little more prep than normal into some side dishes.

Sunday

Grilled Hamburgers & Veggies and the BEST quinoa salad EVER. Find the recipe here. (I subbed almond butter for peanut butter because you know, allergies).

Monday

Chicken, Chickpea & Veggie Stir Fry with Quinoa and Cauli-Rice (Thank you, Costco, for listening to my request for organic cauli-rice!)

Tuesday

Grilled Polish Sausages (Grass Fed from Costco–my new favorite!) & Veggies, Corn, Melon, Baked Fries

Wednesday

Grilled Zucchini Hummus Wraps, Pea Salad, Honeydew Melon (I adapted this recipe for the wraps–we didn’t have tomato and I added in avocado. All prepped on my trusty George Foreman Grill! They were SO delicious)

Thursday

Grilled Chicken and Veggie Kebabs, Salad, Watermelon, Power Balls

Friday

Corndogs & Leftovers (I had a MOPS retreat so I am assuming this is what my husband ate. I had gluten free pizza)

Grilled Salmon & Veggies, Baked Potatoes

It’s been fun to create meals around the veggies from our CSA box. I’m hoping to do a full post on that at the end of the summer. Anyone have a good recipe for beet greens??
