Meal Planning Monday April 17

I’m a day late, due to a sick babe. But here is the run down of what we ate last week!

MondayHam Frittata (Easter Leftovers) with Frozen Hashbrowns

Hooray for cleaning out the fridge and freezer! This was an easy way to repurpose our ham leftovers from Easter dinner. I threw in some spinach, peppers, and onions as well and feasted on this giant frittata for breakfast the rest of the week.

Tuesday  Leftovers (Chicken and Rice Soup from my Knife Skills Class)

They sent us home with all the ingredients (chopped with our new knife skills, of course) for chicken soup, so I cooked up a big batch on the weekend, added some rice, and we ate the leftovers for lunch (and dinner) throughout the week.

Wednesday- Leftovers

Have I mentioned that leftovers are my favorite meal? We went to a luncheon on Tuesday so our leftovers stretched an extra meal this week.

Thursday- Spicy Spinach Artichoke Slow Cooker Chicken over White Rice with Broccoli

Just posted the recipe for this because it was SO delicious! This was our son’s first time having broccoli and I think he loved it just as much as we loved the chicken. Yay for little green trees!

Friday– Ate Out

SaturdayOne Pan Roasted Sausage, Onion, Potato and Pepper

I am all about the one pan meals! Saw this in a cookbook last week and thought I would give it a try. It was SO tasty, although the potatoes took longer to cook than I was expecting. We used uncured pork kielbasa for our sausage. Cut into small pieces, cover with avocado oil and garlic salt, and roast on baking sheet at 425 degrees for about 45 minutes.

SundayShepherd’s Pie (Link is for my allergy friendly recipe, but it is a good base to work from if you need a recipe)

I had a meal train delivery yesterday, and I’m thankful I decided to make the food the day before because my sick little guy did not want to be put down. I always make a double batch so we can eat too, which means we ate our shepherd’s pie a day early and stashed away the extra pie to be cooked for our friends with the new babe. I added spicy Italian sausage to the mixture, and cream cheese to the potatoes (once again, cleaning out the fridge!) and it was VERY tasty!
